  • Goat Cheese Crisp and Potato Salad

    Now, I’m not often one to opt for salads. I’m trying to get healthier, but my big plan is really just to cut out pop, and start running on the elliptical (which is what I’m supposed to be doing now, but the kids went down for a nap really easily today, and I’m thinking I can knock out this post and join them for an hour, so maybe the salad post is on point today). You know what can make a salad a whole lot better though?

    Cheese.

    And not just any cheese. Goat Cheese, the soft loggy kind that I just can’t get enough of (it’s my favorite burger topping too).

    I’d like to introduce you all to my new favorite lunch. I haven’t quite convinced Oliver that it’s a lunch (he always side-eyes salad), but if I throw a hot dog on a plate with this beside it, he’s quite happy to pick away. Silly boy. If you already know Panzanella salads, well first off, lucky you and why didn’t you tell me about them sooner. Second, you may think that this is not a panzanella. Look, I like cheese.

    Who doesn’t like cheese? If you are one of those crazy people (cough, Bo), who doesn’t like cheese, just leave it out.

  • Canadian Bacon and Egg Sandwich

    Just another quick sandwich post, clearly I have an addiction going right now.

    Ciabatta bread, fried egg, fried peameal bacon, a dash of ketchup (if that’s your thing), and some cheese (personally I’m a fan of havarti; I’m a fan of it on just about everything).

    So, no recipe coming with this one, I don’t think it’s necessary (that and I didn’t take any pictures during). This can just be one of those things where you wake up and go, “yep, time for that Canadian sandwich”.

  • Pizza Roll-ups

    I was stuck trying to think of something different for Oliver for lunch. I opened the crisper and saw the pile of green peppers that I’d forgotten I’d bought, then I looked to the island and saw all the sweet onions. I didn’t really have a choice, what ever it was I was making, it was going to be chop full of those two things.

    I made a pizza for lunch on the weekend, so I had some leftover pepperoni, cheese and sauce, and some tortillas (which to be honest, I have no idea why I actually bought those last week, but I’m glad I did).

  • Grown-up Ham and Cheese Sandwich

    I’m not even sure why I call these grown-up sandwiches, because it’s not like they take a lot more effort than a standard sandwich (I’m convinced they take less than some). I guess the difference is that I cared when I made it. When I don’t care, it’s just two slices of bread from a bag, some deli meat, and some condiments slapped together and eaten cold.

    Take the time to care. Especially seeing as all the time required is about 6 minutes.

    It’s so simple you’re not even getting a recipe to print. Or step by step pictures, but that’s more because I was going crazy with kids and forgot.

    Oh, hello blog.

    Um, it’s not you, it’s me…

    Seriously.

    So, I’ve been completely absent for the last three weeks. Lets just chalk it up to holiday madness and my desire to get onto a ridiculously regimented schedule as a new year resolution. It only took me three days (and the 5 am rising of my children), to adapt to it enough to get a blog post up.

    Here’s what I consider the gem of my holiday cooking, and surprise, it’s not a cookie. I figured out a way to make a pizza with a chewy, airy crust that doesn’t need to rise, and is ready to eat faster then you could get one delivered.

  • Open Faced Grown-Up Grilled Cheese

    Now, I’m known for many, many bad habits. One of the worst (at least according to my mother), is that I don’t eat leftovers. I’ve passed this on to Bo to, and I admit, it’s horrible.

    It’s also got to change.

    Food is bloody expensive, and I’m in the (also horrible) habit of cooking far too much for two and a half people. See, I told you, lots of bad habits.

  • Pizza Rolls

    Pizza Rolls (aka Pizza Fingers)

    These were my favorite things to order at a restaurant called Melanie Pringles in the town I grew up in (I think it’s still there). When we moved, I found them at M&M Meats, but then they stopped making them. I had no choice but to figure out the recipe on my own. Lucky me it was ridiculously easy, and they freeze well. Woot!

    Prep Time: 10 minutes
    Cook Time: 15 minutes
    Serves: 4

    Ingredients:


    1 package large won-ton wrappers (16 count)
    1 package pre-sliced pepperoni
    Motzerella cheese, grated
    2 small cans of pizza sauce
    Any other toppings you want
    1 tbl cornstarch mixed with ½ cup of water
