Nourish is a new cookbook of whole food recipes featuring seeds, nuts, and beans by Nettie Cronish & Cara Rosenbloom, RD, and it’s quickly becoming a favourite in my house. Check out my review, and others by some of my blogger friends, for a chance to win your copy!
Before I get into just how amazing this cookbook is, I want to introduce you to Nettie and Cara. Nettie Cronish is a vegetarian chef, culinary instructor, and author/ co-author of five cookbooks (5!). She also has over 30 years experience in this, meaning she’s one of the few people I can confidently call an expert.
Cara Rosenbloom is a registered dietitian, President of Words to Eat By located in Toronto, and a fellow blogger at WordsToEatBy.ca She’s incredibly accomplished academically, professionally, and personally, and she’s committed to inspiring people to make healthier food choices.
The timing on this cookbook for me couldn’t have been better. Due to some new health issues my husband is dealing with, I’m facing a big learning curve in the kitchen, overhauling how I think, and what I cook, to make sure he stays healthy (I’ll go into more detail in another post). Fining a book with 100 recipes pairing health-boosting ingredients with recipes and food that I already love to cook has been an absolute blessing over the last couple of weeks.
So far I’ve made a version of their On The Go Granola Bars, an amazing snack that was great for Bo to grab in the mornings and enjoy when he needed a bite throughout the day. You know who else loved them – the kids. There is nothing better than being able to make a healthy snack the entire family goes crazy over. Curious about what was in them? They were loaded up with oats, bananas, a variety of seeds and dried fruit, and some coconut. Yep, pretty awesome.
My absolute favourite dish so far though was their roasted butternut squash with cherries, mint, and sunflower seeds. In their recipe they suggested you could substitute sweet potatoes or acorn squash for the butternut squash. Instead, I roasted the butternut squash together with sweet potatoes. It was OMG yummy, probably the best side that I’ve made in quite some time, and one that’s going to be in constant rotation in this house.
Nourish is broken down into 9 chapters: Nutrition Quick and Simple (a really quick, simplified guide to eating better), The Power of Seeds, Nuts, and Beans (a great resource about the three ingredients, including the basics on how to prepare them), Breakfast & Brunch, Appetizers, Salads, Soups & Stews, Entrees, Vegetable Side Dishes, and Snacks and Desserts.
It literally covers everything from the moment you wake up, to the midnight snack.
