Living in Canada, it’s basically impossible to not know who Rose Reisman is. She is a legend here, having authored 18 cookbooks over the last twenty years, all of them focusing on eating and living well. I already have a collection of them on my office shelf, but her latest, Rush Hour Meals, is quickly becoming my favourite.
I know, I keep lamenting about how busy we are right now, but with two of three kids in sports three nights a week, it is HECTIC in our house. Quick meals have become an absolute must for me, but I can’t sacrifice eating heathy either now with Bo.
Rush Hour Meals is full of 115 amazing meal ideas; mains, sides, soups, desserts, and even some all-day breakfasts. A few of my favourites so far are the loaded nachos with ground turkey, parsnip soup with prosciutto crisps (LOVE prosciutto crisps!!), and the baked chicken thighs with homemade BBQ sauce and pineapple. Making my own BBQ sauce is becoming common place with Bo’s diabetes – the store bought stuff is horrible, and with just a few small tweaks to most recipes, I can make versions at home that taste exactly the same, but won’t spike his sugar.
Hands down though, my favourite side dish in Rush Hour Meals? The Sweet Potato Skins:

Something else I loved: this was such a hands off side dish, and the center that I scooped out, I get to use with dinner tonight. So making one quick side last night, turned out to be making two in the time of one. And this cookbook is full of this kind of awesomeness!

Good starting place but way too sweet…will increase the spices and eliminate the sweetness except for the brown sugar.

If you want to spend less time just poke holes in the spaghetti squash with a fork and then cook it in the microwave. I haven’t done one in awhile but I want to say it usually takes about 20 mins. Start with 10-15 mins and check it frequently and once you can stick a fork into it easily or press it and it’s soft (with an oven mitt on!!!) it’s done. Let it cool, then cut and scoop everything out!

Just made this for dinner tonight, so good! I had some trouble finding some of the ingredients so I substituted tahini and a red curry paste for the miso, also did shrimp instead of tofu (for pleasure of My fiancé haha) but I have to say to definitely make the soft boiled egg! It was the cherry on top .👏👏
