These cheesecake cups are DELICIOUS! They are sweet, creamy, fresh, absolutely everything you want in a cheesecake, and they are GUILT FREE! This is not your grandma’s recipe, and thank goodness for that (I mean, can we all admit that it’s amazing to have options now like Gay Lea’s Fat free Cottage Cheese). Yep, that’s a spoiler. I’m rocking a major health kick right now, I’ve got six months until a vacation that I’m most likely doing with the kids on my own, and that means I’ve got to get my butt in gear to keep up with the three of them. But, you know, I LOVE food, so it’s kinda like I’m going to run, jump, dance, zumba, and walk my way to being in shape while still eating. And if I can find some healthier ways to keep my sweet tooth happy, BONUS!
The thing with my sweet tooth though, is I never know when it’s going to kick in. I could be fine all day, and then BAM, 5pm hits and I NEED something sweet to eat after dinner. That used to mean a trip to the snack cupboard, but that baby is off limits to me for a bit. That’s why this had to be FAST. So fast that it wouldn’t feel daunting to whip up, and easy too, for the same reason.
So, these amazing cheesecake cups are as simple as putting all the ingredients into a food processor or blender, and mixing until smooth. I know, I KNOW!!!! I’m just as excited as you are right now.
Wondering what ALL those ingredients are. They’re staples in this house, which means they’re always on hand. Seriously, this is the gift that just keeps on giving! We’ve got Gay Lea’s Fat Free Cottage Cheese, some 0%MF plain greek yogurt, vanilla extract, honey, lemon zest, and 0 calorie sweetener (or you can use sugar). You mix it all together until smooth, and that’s it, you’re done!
Want one more reason to LOVE these? Each serving is just 130 calories!!! If you need to cut some more off, it’s just 80 calories without the graham cracker crumbs. An average slice of cheesecake is over 800 calories – INSANE!

Gay Lea iPad Mini 2 Giveaway – April 2017
5 minute healthy, low fat, high protein, cheesecake cups
Ingredients
- 1/2 cup graham cracker crumbs
- 1 cup fat free cottage cheese (I use gay lea)
- 1/4 cup 0% plain greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- zero calorie sweetener equivalent to 2 tsp sugar (check your specific package equivalents)
- zest from half a small lemon
- Fresh berries (optional for the top)
Instructions
- Get out four small dishes, and put 2 tbsp of graham cracker crumbs into the bottom of each one.
- Put the cottage cheese, yogurt, honey, vanilla, sweetener, and lemon zest into the bowl of a food processor or blender. Mix until smooth.
- Split the cheesecake mixture evenly among the four dishes, and top with fresh berries if using. Serve right away.
Notes
If making ahead of time, wait to assemble until just before serving so that the graham cracker crumbs don't get soggy.
The cheesecake mixture can be stored in the fridge, in an air tight container, for a few days.
