These are my top five recipes for the BBQ: Chili and Tequila glazed chicken thighs, BBQ Chicken Pizza (and an entire guide to pizza on the grill), Homemade Gyros, Spinach and Cheese stuffed Bacon Wrapped Pork Tenderloin, and Bruschetta Topped BBQ Pork Chops. These are the ones I go back to over and over again because they never let me down.
Ancho Chili and Tequila Glazed BBQ Chicken ThighsThese ancho chili and tequilla glazed BBQ chicken thighs came about when I decided I needed a meal that would put me in the mood for some strawberry margaritas. Let me tell you, these did the trick! Don’t worry about the heat either. It’s super mild and sweet – the kids had no trouble eating them. This is one of my favourite meals to eat outside on the deck… especially with a few squeezes of lime, and that margarita!
Bruschetta Topped BBQ Pork ChopsThese bruschetta topped pork chops are one of the brightest, freshest, and most surprising meals you’ll make this summer. The grilled chops are smothered with mozzarella cheese, then topped with a fresh tomato bruschetta, basil, and drizzled with balsamic glaze. These exploded on buzzfeed when I first made them, and once you give it a try you’ll understand why!
BBQ Chicken PizzaMy BBQ chicken pizza is hands down, my favourite recipe. Not just my favourite BBQ recipe, or my favourite pizza recipe, it’s my all-time favourite recipe ever. I make BBQ pizza for us at least once a month, rain or shine, winter or summer. The dough is absolutely incredible, and if it’s really gross outside and I don’t want to grill the whole thing, I just grill the dough on both sides, then throw it on a baking sheet, load it up with toppings, and pop it under the broiler. I’ve also compiled my ultimate guide to pizza on the grill to give you all the tips and tricks you need to have this turn out incredible every time!
Spinach and Cheese Stuffed Bacon Wrapped BBQ Pork TenderloinMy spinach and cheese stuffed bacon wrapped BBQ pork tenderloin is something I came up with on a whim. I had a bunch of family coming over for dinner before one of Oliver’s T-ball games, and I just took stock of the fridge and pulled out everything I thought would go together. It is AMAZING! Seriously, check out the comments on the post. Spinach, goat cheese, onions, and garlic are rolled up inside a butterflied pork tenderloin. Then, because two porks are better than one, I wrapped the entire thing in bacon. Sliced and served it looked amazing, and blew everyone away!
Homemade Gyros on the BBQ
My homemade gyros on the BBQ are hands down just as good as any you could get at your local Greek takeout. A mix of lamb and beef, loaded with all those seasonings and flavours you expect, you even get to shave it just like they do at the restaurant! I’ve included step-by-step photos to make it super easy for you, and if you really want to kill it, my recipe for homemade pitas is in the post too.
